How do you grow the hardy Japanese ginger?

This easy to grow ginger originates from Japan and is widely used in Japanese dishes. The plants will grow to a height of 1m (3ft) with a spread of 1.5m (5ft). The plants are hardy to at least -15°C.

The Japanese ginger can be grown in most soils to which well-rotted manure or garden compost has been added. The soil should be moisture retentive and well-drained. This hardy, herbaceous perennial can be grown in sun or partial shade. Where more than one plant is being grown space them 30cm (12") apart. Keep the plants well watered and feed regularly during the growing season. The plants will grow quickly forming a large clump within one to two years. Remove the foliage in autumn when it turns yellow, falls over and comes away easily from the plant.

The Japanese Ginger produces two crops, in spring the young leaf spears are harvested. In late summer pink flower buds emerge from below ground which are picked before they open. The rhizomes are inedible. Both the spears and buds can be sliced or grated and used in the same way as the traditional ginger root.
